do you gals cook / bake anything special for Easter weekend?

we're heading over to my parent's house this afternoon to spend time together with my family. then back there again tomorrow after church. that means food needs to be made for the clan.

i was up late {til 2:30am} making monster cookies.
And more cooking going on right now for another couple hrs.

I usually prepare a big meal, but this year I'm chillaxin'. My favorite Easter dish is a layered potato salad. What makes it so delicious is the sour cream, horseradish, mayo sauce. It's layered with fresh parsley and onion. I'm drooling thinking about it.

sherry, funny you say that about chillaxin'.....my mom and i discussed that exact thing the other day. we usually have a big meal on Easter but we're going for SIMPLE this year. i'm making a few side dishes and dessert, and mom is throwing in a ham, but we're not going all out.

we're excited about not spending hours in the kitchen tomorrow and spending lots of time just chillin' with each other. sounds like a perfect day that we need!

You girls have my mouth watering with the monster cookies, layered potato salad and Puerto Rican rice! Yummers!

Since my dad passed on 3 years ago this month, we've been just doing the Easter lunch reservations somewhere close by, but this year my SIL said we'd just go to their place after church service. They are making grilled shrimp and crabcakes and other sides and my mom is making a ham and desert. Think I'm just taking along a beer bread and Spinach dip. Ahhh, yes, a day full of feasting!
